Deliciously crumbly and nutty, these sugar-free almond cookies made with ZuckerO sweetener will satisfy your cookie cravings without any sugar.

Ingredients

  • 1 ½ cups almond flour (or finely ground almond meal)
  • ¼ cup butter (softened) or coconut oil (for dairy-free option)
  • 11-12 ZuckerO sweeteners (equivalent to 50 grams of sugar; adjust based on your sweetener’s conversion)
  • 1 tsp vanilla extract
  • 1 egg
  • ¼ tsp baking powder
  • Pinch of salt
  • Optional add-ins:
    • ¼ cup unsweetened chocolate chips (sugar-free)
    • ¼ cup chopped nuts (like almonds, walnuts, or pecans)
    • A pinch of cinnamon or cardamom for flavor

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a mixing bowl, cream together the softened butter (or coconut oil) and ZuckerO sweetener until light and fluffy.
  3. Add the egg and vanilla extract and mix until smooth.
  4. In a separate bowl, whisk together the almond flour, baking powder, and a pinch of salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
  6. If you’re adding any optional ingredients like chocolate chips, nuts, or spices, fold them into the dough.
