ZuckerO Sugar-Free Almond Cookies
Deliciously crumbly and nutty, these sugar-free almond cookies made with ZuckerO sweetener will satisfy your cookie cravings without any sugar.

Ingredients
- 1 ½ cups almond flour (or finely ground almond meal)
- ¼ cup butter (softened) or coconut oil (for dairy-free option)
- 11-12 ZuckerO sweeteners (equivalent to 50 grams of sugar; adjust based on your sweetener’s conversion)
- 1 tsp vanilla extract
- 1 egg
- ¼ tsp baking powder
- Pinch of salt
- Optional add-ins:
- ¼ cup unsweetened chocolate chips (sugar-free)
- ¼ cup chopped nuts (like almonds, walnuts, or pecans)
- A pinch of cinnamon or cardamom for flavor
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- In a mixing bowl, cream together the softened butter (or coconut oil) and ZuckerO sweetener until light and fluffy.
- Add the egg and vanilla extract and mix until smooth.
- In a separate bowl, whisk together the almond flour, baking powder, and a pinch of salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
- If you’re adding any optional ingredients like chocolate chips, nuts, or spices, fold them into the dough.
- Roll the dough into small balls (about 1 tablespoon each) and place them on the baking sheet. Flatten them gently with your fingers or a spoon.
- Bake for 10-12 minutes, or until golden around the edges.
- Allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
