ZuckerO Sugar-Free Payasam (Rice Pudding)
This traditional Kerala Payasam is made with ZuckerO sucralose-based sweetener, giving you a creamy, comforting dessert without the sugar.

Ingredients
- ½ cup short-grain rice (or parboiled rice)
- 4 cups full-fat milk (or coconut milk for a dairy-free version)
- ¼ cup ZuckerO sweetener (adjust based on your sweetener’s conversion chart)
- 2 tbsp ghee (clarified butter)
- 10-12 cashews
- 10-12 raisins
- 2-3 cardamom pods (or ½ tsp ground cardamom)
Instructions
- Wash the rice thoroughly and drain.
- In a heavy-bottomed pot, heat the ghee and fry the cashews and raisins until golden brown. Remove them and set aside.
- Add the washed rice and roast lightly in the ghee for 1-2 minutes.
- Add the milk to the pot and bring it to a boil, then reduce the heat and simmer. Stir occasionally to prevent the milk from sticking. Let it cook for about 20-30 minutes until the rice is soft.
- Once the rice is cooked, add the sweetener (ZuckerO) and stir to dissolve.
- Add cardamom and let it simmer for an additional 5 minutes until it thickens.
- Serve hot or cold, garnished with fried cashews and raisins.
